A healthy brunch or grab-and-go alternative

In my constant quest to have something healthy at hand for when I am on the move or in a hurry in order to avoid the (mostly) unhealthy ccafé food, not to mention the sandwiches on sale everyhwere, I made some pancakes with the following ingredients and put them in the freeezer (after they cooled off on kitchen paper:

One large grated sweet potato, a chopped red bell pepper, a chopped red onion, chickpea flour, six eggs (separated with the whites whipped to peaks), turmeric, black pepper, chili flakes, olive oil, curry leaves, kalonji, ground dried mushrooms, nutritional yeast, a bit of salt, all mixed together with just enough water to be able to place a ladle full to fit my smallest frying pan and bake the thick-ish pancakes for about five minutes on each side.
