Mushrooms are a superfood

Let’s talk about mushrooms: AI says: “Based on recent research, consuming a small amount of mushrooms daily may significantly lower your cancer risk. A meta-analysis of observational studies suggests that eating about 18 grams of mushrooms a day—equivalent to approximately one-quarter to one-half cup of chopped mushrooms, or two medium-sized mushrooms—is associated with a 45% lower risk of cancer compared to not eating them at all.”

If you find it impractical to incorporate that into your diet on a daily basis, or even several times weekly, or are just not crazy about mushrooms, here’s a trick: Always have dried mushrooms, for example shiitake, on hand (all the bio supermarkets have them), and grind the equivalent of a couple of them and add this to whatever you are cooking, stews, curries, omelets, bread, whatever – even salad dressings (in this case together with the daily tablespoon of freshly ground flaxseed which OF COURSE you ALWAYS remember :-)). It is barely noticeable and just adds a bit of depth of flavour.
