- 500 g cooked black rice
- 2 tsp toasted sesame oil
- A handful of raisins or other dried fruit
- 3 small red onions, finely chopped
- About half a small red cabbage, chopped
- A handful walnuts, chopped
- Fresh basil or cilantro or mint, or a mix of all three
For the dressing:
- Juice of two limes
- 3 tblsp fish sauce (or the vegan version “no-fish sauce”
- 2 tblsp toasted sesame oil
- 2 tblsp extra-virgin olive oil
- 2 tblsp date syrup
While the rice is still freshly cooked, stir in the sesame oil and raisins/dried fruit, and let it cool. Then add the rest of the ingredients.
Mix the dressing and stir in half of it and serve the rest separately for drizzling.
