- 500 g cooked black rice
- 2 tsp toasted sesame oil
- A handful of raising
- 3 small red onions, finely chopped
- About half a small red cabbage, chopped
- A handful walnuts, chopped
- Fresh basil or cilantro or mint, or a mix of all three
For the dressing:
- Juice of two limes
- 3 tblsp fish sauce (or the vegan version “no-fish sauce”
- 2 tblsp toasted sesame oil
- 2 tblsp extra-virgin olive oil
- 2 tblsp date syrup
While the rice is still freshly cooked, stir in the sesame oil and raisins, and let it cool. Then add the rest of the ingredients.
Mix the dressing and stir in half of it and serve the rest separately for drizzling.
