In the last couple of years I have become more and more aware of the fact that for some reason or other, it seems like carved in granite that breakfast must not contain any kind of nutritional value. In fact, it has to be as unhealthy as possible (white bread, marmelade, plastic cheese, fruit juice – empty calories with sugar, transfats and additives) and make you crave more of the same long before lunch.
I am now contantly looking for healthy breakfasts (which I usually combine with lunch), both ones that require a bit of preparation and cooking, and ones that are more grab-and-go.
I also very occasionally miss the concept of bread, so I found this on a youtube channel I follow, and will bake it soonest.
You will need a greased or baking-paper lined loaf tin
20g Chia seeds
150g Oats
150g mixed nuts- chopped
150g mixed seeds, eg sesame, sunflower, pumpkin seeds
35g Psyllium Husk
1.5 tsp salt
Mix all dry ingredients, then mix in
3 TBS Olive Oil
400ml water
Mix well, press into the tin, making sure all corners are reached, let sit overnight, bake one hour at 180C, then 15 minutes bottoms-up out of the tin.
