Salad with beetroot, ginger and orange

Mix together:

300 g beetroot, peeled and grated

30 fresh ginger, peeled and finely grated

2 ‘acidy’ apples, diced

For the dressing, mix together:

5 tblsp lemon juice

A little bit of honey

1 dl oil (walnut oil works really well here)

Pour over the beetroot/ginger/apple mixture and leave for about half an hour

Before serving, add a bit of grated orange peel and one or two oranges very finely sliced.
